These spicy peanuts are the perfect balance of heat and sweetness, bringing an element of texture and spice to one of our signature vegan salads, Ritual. Ritual will be departing our menu this fall, but these spicy peanuts are just too good to not share. Enjoy!
MIXT Spicy Peanut Recipe
(makes 2 cups)
2 cups roasted, unsalted peanuts
1 tbsp + 1 tsp corn syrup
1 tbsp warm water
2 tsp curry powder
¼ cup + 2 tbsp granular sugar
¼ tsp black pepper
¾ tsp cayenne pepper
Heat oven to 350 degrees. Prep one 21” x 15” baking sheet lined with parchment. Mix together the corn syrup and water and stir until corn syrup is dissolved, set aside. Mix together the curry powder, sugar, black pepper, and cayenne pepper, set aside. Place the peanuts in a large bowl, spreading them out as much as possible. Drizzle water and corn syrup mixture evenly over peanuts and mix together with a spatula. Sprinkle spice mixture over peanut mixture and mix with a spatula until evenly coated. Pour spiced peanut mixture onto the prepared baking sheet and spread out as evenly as possible. Bake for 25 minutes, stirring the mixture at the 10 minute and 20-minute mark. Remove from the oven and stir the mixture one more time and let cool. Once cooled, place in an airtight container and store up to 5 days.
